What is a Weissbier? There are many names for it: weissbier, weisse, witbier, and even wheat beer. All of these, however, are variations. Let’s start at the beginning. Back in the middle ages, tribes in the lands of Germany brewed beer regularly. For one reason or another, they began to brew much paler beer than before. The reason being that brewers basically used the resources at hand. Wheat grain and barely were both overabundant at the time, which caused the creation of Weissbier. Lighter, paler than the darker beers the tribes were used too, they coined the name “White beer,” or weissbier. So those varying names I just wrote are actually different variations of weissbier. There’s Southern German Weissbier, Berliner Weisse, Belgian Witbier, and the American Wheat beer. These are the common weissbiers of our day, and (much more likely than not), if you’re drinking a weissbier, it’s one of these kinds. The two of the most common of these beers are the Southern German Weissbier, often referred to as Weizen or Hefeweizen, and the American Wheat beer. Hefeweizen simply means Yeast Wheat. Hefeweizens are typically 50% to 60% malted wheat with the remained of the grist being malted barley. You’ll notice that Hefeweizens are a highly carbonated brew with a golden white tone, often amber. They should be slightly cloudy when poured with a medium weight and white head. The best Hefeweizens often have a sedimentary yeast at the bottom of the bottle. It is customary to pour about 85% of your beer into the glass. Then, with the remaining beer still in the bottle, roll the bottle in your hands to loosen any remaining yeast. Last, pour the remaining beer into the glass. The yeast holds much of the hefeweizens’ signature taste and should be settled on top of your glass. Hefeweizens however are very different then a classic American Wheat Beer. American wheats often us a neutral American yeast strain which helps promote the malts. A much cleaner flavor is appreciated with American Wheats. American Wheats often employ hops to the malt which is uncommon with a hefeweizen. Wheat beers are most common in the summer and even used in summer brews. With coriander and exotic Asian citrus called calamnsi, the beer is bright in flavor but still holds a commonly wheat beer flavor as is is unfiltered. Berghoff Beer also brews a Hefe-Weizen. 60% malted wheat and 40% pilsner and other malts, this unfiltered cloudy beer has the yeast sediment that makes all hefeweizen beers great. A creamy mouth feel with subtle notes of banana, bubblegum, and spicy clove. Whatever you call it, wheat, white, wit, weiss, hefeweizen or just delicious, we don’t care.
